Our Drinks

From The Tap

Some places will offer you as many as 30 beers on draught with no way to guarantee the freshness or quality of any particular pint. At the Imperial, our multi-keg draught lines deliver a select few beers, ensuring that each sip is as cold and as delicious as possible. We are now very proudly serving up the finest independent local brews, with a few easy drinking exceptions from around Canada. An extensive selection of bottled beers (domestic, premium and imported) is also available.

Classic Cocktails

Both of our bars offer a wide variety of premium spirits and liqueurs.  Many "top shelf" brands are available for a small premium. We'll always be happy to learn how to mix up your favorite libation, but these classic cocktails are what we do best:

Martini

  • Vodka or gin with dry vermouth
  • Shaken, stirred, rocks or neat
  • Served with a twist of lemon zest or 3 green olives
  • Our recommendation: Gin, shaken, with a twist

Manhattan

  • Rye or Bourbon with sweet vermouth
  • Shaken, stirred, rocks or neat
  • Served with a dash of Angostura bitters and a cherry
  • Our recommendation: Rye, stirred on the rocks

Gimlet

  • Vodka or gin with Rose’s Lime
  • Shaken, stirred, rocks, neat or with soda on ice
  • Served with a wedge of lime
  • Our recommendation: With soda on ice

Single Malt Scotch

We have several varieties available and are pleased to purchase requested brands or vintages. Enjoy it on the rocks, neat, or with a complimentary bottle of unchilled water on the side.

Some Special Wines

The Imperial features a small rotation of excellent, privately imported wines. Come in and taste these L.C.B.O. unlisted gems soon (often starting at under $6 a glass):

CURRENT WHITE WINES

From the Andes, Bio Bio Valley, Chile:

2006 L'Arista Chardonnay

  • Buttery smooth with vanilla notes and a dry, oaky finish.

2006 L'Arista Sauvignon Blanc

  • Lighter than L'Arista's Chardonnay, but with ample citrus and fresh-cut grass aromas. Perfect for a sunny day on the patio.

From Western Austraila:

2006 Billy Goat Hill
                  Sauvignon Blanc Semillon

  • Dry, light and elegant. Offers an attractive aroma of gooseberry and citrus fruit persisting to a clean and refreshing finish.

CURRENT RED WINES

From the Andes, Bio Bio Valley, Chile:

2005 L'Arista Cabernet Sauvingnon

  • Blood red and deeply flavourful. Lots of fruit without being remotely "Jammy."

2005 L'Arista Merlot

  • Soft and light in emulation of the best French efforts with this noble grape from Bordeaux.

From Western Austraila:

2005 Billy Goat Hill Cabernet Sauvignon

  • Medium bodied and not too overpowering with alcohol, oak or sweetness. A very well balanced wine.

2005 Harvey River Bridge Shiraz

  • A truly "big" Shiraz: Rich, bold and beyond fruity with blackberry notes and a dry finish.

SPARKLING WINES:

We always have a few chilled bottles of something dry and bubbly on hand. Please call ahead for special requests or to ensure that we have appropriate stemware ready for you.
